Pici Pasta...a simple, rustic Tuscan pasta. Pici pasta is produced by La Dolcezze di Nanni in Siena, Tuscany. Pici pasta, a thick, hand rolled pasta made only from durum wheat flour & water. In making Pici pasta the dough is rolled out in thick flat sheets, & then cut into strips. Pici pasta...a humble pasta looking somewhat like fat spaghetti with much longer strands. Pici pasta is twisted into small coil-like nests before drying. Pici pasta nests are slow-dried at a low temperature thus preserving the original, true flavors. Cooking time for Pici pasta is about 20 minutes, but worth the wait!
The porous nature of this specialty pasta makes Pici pasta perfect for any type of sauce. It is excellent with truffle sauce, garlic & peppers sauteed in extra virgin olive oil, pesto, or a tomato-basil sauce.
