Almond Crusted Halibut
Approximately 10 oz. Halibut cut in two
1 cup almonds, finely chopped
1 tsp parsley, chopped
1 tsp thyme, chopped
1 orange, zested
1 tbsp. orange juice
1 tsp honey
1/2 tsp salt
1/2 tsp black pepper, freshly ground
3 tsp roasted
almond oil
Preheat oven to 350F.
Mix all the ingredients together (besides the halibut) in a bowl and pour
out onto a dinner plate. Press the halibut into the crust making sure it is
coated. Place on a baking sheet and bake for 10 to 15 minutes or flesh bounces
back to the touch.
Yield: 2 servings.
