Parmesan, Truffle Aïoli
1 cup mayonnaise
1/4 cup parmesan cheese, grated
2 tbsp black or white truffle oil
1 clove of garlic, blanched until tender (boiled for a few minutes)
1 tbsp parsley, chopped
1 tbsp sherry vinegar
Salt and freshly ground black pepper to taste
Mash the garlic and mix all the ingredients together. Adjust
seasoning to taste. Serve with crudités or as a sandwich spread.
