Pork Tenderloin
(Serves 2)
ingredients
1 pork tenderloin about 1 lb 2 medium onions, sliced 1/2 stick margarine
Rub: 1 tablespoon kosher salt black pepper 1 tablespoon dried thyme Chef Pascal Balsamic, Tarragon & Roasted Garlic Sauce
directions
- In a heavy saucepan, at medium heat add 1/4 stick margarine and brown the pork tenderloin evenly on all sides, about 10 minutes total. If the margarine browns too much, reduce the heat.
- Remove the pork and put on the side.
- Put the remainder of the margarine and add sliced onion to a saucepan and caramelize (about 10 minutes).
- Meanwhile, preheat the oven to 350 degrees.
- Deglaze a saucepan with Chef Pascal Balsamic, Tarragon & Roasted Garlic Sauce.
- Place the pork tenderloin directly in a roasting pan, add onion and balsamic, tarragon & roasted garlic sauce on top.
- Roast the pork tenderloin for 20 to 30 minutes.
- Add some water if the sauce becomes too thick. Add salt and pepper to taste.
