Spicy Grilled Mahi Mahi over Tropical Fruit Salsa
serves 4
ingredients
4 pieces mahi mahi (each 6 ounces) 2 tablespoons chopped parsley Salt and pepper to taste 1/2 cup Chef Pascal Carrot Marinade Sauce
directions
- Place fish in a shallow dish or Ziploc bag and add Carrot Marinade Sauce. Refrigerate for 1 hour.
- Meanwhile preheat grill to medium-hot.
- Remove fish from marinade and arrange in a grill basket coated with cooking spray.
- Cook, covered with grill lid, approximately 4 minutes per side. Add more marinade if the fish get too dry.
- Meanwhile, set up 4 plates with tropical fruit salsa (see recipe) in the middle.
- Transfer fish on top of fruit, garnish with chopped parsley and serve.
