How to use sombreroni...
Directions:
Bring 3 qts. of coarse sea-salted water to a boil and add the Sombreroni. Stir gently. After two minutes, drain gently. Immediately separate the pasta discs from the pasta hats. Place the discs on a buttered oven pan. Put 1-2 teaspoons of stuffing (See Suggested Use) on each disc. Place the hats over the discs. Add simplea tomato sauce, enough to coverthe bases of the hats. Sprinkle with Parmesan cheese. Bake for 20-30 minutes at 350 degrees. Serve hot.
suggested use:
Prepare a stuffing such as steamed spinach and ricotta cheese. Adjust for salt, pepper, and nutmeg. Drain well and mix. Prepare a simple white bechamel sauce with butter, flour, and milk. Continue with above directions.
Another stuffing suggestion: Mix well pre-cooked sausage and pre-cooked mushrooms. Adjust for salt/pepper, drain well, and add to the hats. Continue with above directions.
