Smoked Salmon Pasta Salad*
serves 4

ingredients

1 lb. pasta
6 oz. smoked salmon
2 T. rinsed and minced capers
zest of 1 lemon
2 T. chopped garlic chives
2 T. chopped Italian parsley
1 T. fresh lemon juice
salt & freshly ground pepper to taste
 
directions
  1. Boil the pasta in plenty of salted water until al dente and rinse under cold water.
  2. Shred the salmon into pieces just smaller than the pasta.
  3. In a small bowl, whisk together the lemon juice, Stella Cadente Meyer Lemon Oil, salt and pepper.
  4. In a large bowl, toss together the pasta, smoked salmon, lemon zest, chives, and parsley. Drizzle the dressing over the pasta and toss lightly to coat.
  5. Serve at room temperature with a mixed green salad and crusty french bread.
