tofu parmesan

ingredients
4 small tofu blocks 1 25-oz jar vino de milo tuscan merlot 1/4 cup shredded parmesan cheese 1/4 cup shredded mozzarella cheese olive oil
directions
- heat oven to 400°F.
- slice tofu blocks in half through the middle width.
- arrange slices on a slightly oiled, or parchment lined, sheet pan.
- bake slices until they take on a very light golden brown color (about 20 minutes).
- remove from oven and let cool.
- lightly grease a baking dish with olive oil.
- arrange the tofu slices in the dish slightly overlapping each slice if necessary.
- pour the tuscan merlot on top. spread evenly.
- return the tofu to the oven for another 15 minutes.
- remove and top with the parmesan and mozzarella cheeses.
- return to oven only to melt the cheese. let stand 5 minutes before serving.
